Wine Making

All of our red wines are prepared in the original open fermenters and are pressed using our Celestin Coq and Cie hydraulic basket press first used for the 1928 vintage. This method of pressing is both traditional and gentle, resulting in rich, soft wine.

By varying the combination and percentage of new and used American, Balkan and French oak, we endeavour to reflect each individual vintage. Decanting our wines prior to serving will enhance their enjoyment. As we have used very little filtration prior to bottling, a small amount of sediment may have formed.
