The base wine was predominately made up of 2008 Shiraz which was aged in neutral oak for 5 years, some 2007 Hillside was added to the blend before secondary fermentation in bottle via methode champenoise. The final dosage, an addition of Kay’s NV tawny.
Colour: Brick red.
Nose: Alluring, rich fruit showing satsuma plumb and Christmas cake, some earthy notes with hints of cigar box.
Palate: Creamy mouth filling bead up front followed by concentrated flavours of blackberry fruit, dark chocolate and toffee. Gentle tannins and fine acidity to finish.
