Fruit was hand-picked, crushed and destemmed, then combined with a whole bunch component and lightly pressed using our 1928 basket press. The juice fermented at cool temperatures to maximise freshness and retain delicate flavours.
A small portion was barrel fermented and aged on lees for 2 months to enhance texture and complexity. This wine reflects a crisp dry style, loaded with fresh bursting fruit flavours of citrus and stone fruit along with a chalky texture and lively minerality on the finish.
